Durum Fida

Ingredients

  • 2 handful of noodles Durum Fida
  • 2 Tbsp butter
  • ½ onion, chopped
  • 1 clove garlic, chopped
  • 2 stalks leek, thinly sliced
  • Salt & pepper
  • 2 cubes Chicken Bouillon dissolved in 4 cups hot water
  • 1 cooked chicken breast, shredded
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 tsp dried thyme

Method

  1. Prepare the vegetables: In a large saucepan, heat butter. Add onion, garlic, leek, salt, and pepper, and cook for 3–4 minutes.
  2. Add vegetables: Add zucchini and carrots and simmer for 10 minutes.
  3. Add broth and pasta: Pour in the chicken broth (water with bouillon) and add thyme. Bring to a boil. Add the pasta nests and shredded chicken and cook for 4 minutes until the pasta is tender.
  4. Serve: Serve hot in soup bowls.
