Ingredients
- 2 handful of noodles Durum Fida
- 2 Tbsp butter
- ½ onion, chopped
- 1 clove garlic, chopped
- 2 stalks leek, thinly sliced
- Salt & pepper
- 2 cubes Chicken Bouillon dissolved in 4 cups hot water
- 1 cooked chicken breast, shredded
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 tsp dried thyme
Method
- Prepare the vegetables: In a large saucepan, heat butter. Add onion, garlic, leek, salt, and pepper, and cook for 3–4 minutes.
- Add vegetables: Add zucchini and carrots and simmer for 10 minutes.
- Add broth and pasta: Pour in the chicken broth (water with bouillon) and add thyme. Bring to a boil. Add the pasta nests and shredded chicken and cook for 4 minutes until the pasta is tender.
- Serve: Serve hot in soup bowls.
